An assortment of spices and herbal bottles arranged on a wooden board with fresh herbs.

The final note that defines the pour.

Crafted to shape structure, elevate aroma, and define the final expression of a properly built Old Fashioned.

Bitters are not an ingredient, they are the architecture of the drink.
Each expression in the Bourbon & Brushes Bitters Collection is designed to interact with bourbon, smoke, and sweetness, bringing balance, depth, and a defined finish to every pour.

Elegant label for bourbon bitters with classic and aromatic themes.

The Foundation - No. 01

Classic Aromatic Bitters

A classic, structure-driven aromatic bitters built on warm spice, subtle citrus peel, and layered botanicals. This is the backbone of a proper Old Fashioned—designed to integrate seamlessly with bourbon while enhancing its natural depth without overpowering it.

Tasting Notes:
Warm baking spice • Light citrus oil • Gentle bitterness • Dry finish

Best With:
Traditional bourbons, high-rye profiles

Smoke Pairing: Oak, Cherry

Elegant label for Citrus Lift orange bitters with vibrant citrus imagery.

Citrus Lift - No. 02

Orange Bitters

A clean, citrus-forward bitters that lifts the entire profile of a cocktail. Built on fresh orange peel with a refined bitterness that cuts through richness and brings clarity to heavier bourbon builds.

Tasting Notes:
Fresh orange zest • Light pith bitterness • Crisp, clean finish

Best With:
Wheated bourbons, sweeter builds

Featured in "The Swamp Bite"

Smoke Pairing: Apple, Maple

Vintage-style label for Velvet Ember cherry vanilla bitters with bourbon and brushes theme.

Velvet Ember - No. 03

Cherry Vanilla Bitters - The Velvet Finish

A deep, rounded bitters that introduces soft sweetness and richness without becoming heavy. Dark cherry and natural vanilla create a smooth, almost dessert-like mid-palate that enhances body and finish.

Tasting Notes:
Dark cherry • Soft vanilla • Subtle spice • Rounded finish

Best With:
Full-bodied bourbons, finished or barrel-select expressions - Featured in the "High Roller" recipe

Smoke Pairing: Pecan, Oak

Vintage-style label for Bourbon & Brushes Barrel Shadow Black Walnut Bitters.

Barrel Shadow - No. 04

Black Walnut Bitters -  The Depth Builder

A bold, earthy bitters that adds weight, structure, and a slightly tannic edge. Designed for cocktails that need grounding—bringing a dry, nut-driven complexity that lingers.

Tasting Notes:
Toasted walnut • Dry earthiness • Bitter cocoa edge • Long finish

Best With:
High-proof bourbons, barrel strength

Smoke Pairing: Hickory, Oak

Midnight Cacao - No. 05

Chocolate Bitters - Elegant, dark, indulgent

A rich, bittersweet expression that leans into cacao, roasted depth, and subtle spice. Adds a luxurious layer to bourbon cocktails without tipping into sweetness.

Tasting Notes:
Dark cocoa • Light roast • Bittersweet finish • Subtle warmth

Best With:
Dessert-style Old Fashioneds, finished bourbons

Smoke Pairing: Maple, Cherry

Roasted Resolve - No. 06

Coffee Bitters - Strong, bold, structured

A bold, aromatic bitters built on roasted coffee notes with a slightly bitter backbone. Designed to add intensity, structure, and a lingering finish.

Tasting Notes:
Roasted coffee • Dark bitterness • Dry finish • Slight smoke undertone

Best With:
High-rye bourbons, bold flavor profiles

Smoke Pairing: Oak, Mesquite

Controlled Burn - No. 07

Habanero Bitters - Not chaos… intentional heat.

A precise, restrained heat-forward bitters that builds slowly across the palate. Designed to enhance—not dominate—bringing warmth and energy to the finish.

Tasting Notes:
Subtle heat • Bright pepper • Clean finish • Lingering warmth

Best With:
Sweeter bourbon builds, fruit-forward syrups

Smoke Pairing: Apple, Pecan

Iron Spur No. 9

Texas Spice Bitters

A bold, unapologetic bitters built for structure, spice, and presence. Inspired by Texas flavor profiles, this expression brings together warm spice, subtle heat, and a grounded bitterness designed to stand up to big bourbon.

Tasting Notes:
Warm spice • Light pepper • Earthy undertone • Long, structured finish

Best With:
High-proof, high-rye bourbons

Smoke Pairing: Mesquite, Oak
